Robert Shrewsbury July 21-2011 Formula for my Jerky “Shrewsjerky”!
I have the Butcher slice an I of Round 3/8th of an inch thick. I like plenty of fat on it-in it, because raw fat detoxifies the body and cooked fat will not. “I of Round” is good meat as meat goes and it is not too expensive. Be sure the Butcher slices the meat against the grain and not with the grain, if you want to be able to chew it. Also the longer the Jerky cures the softer the meat gets. After five days it will be really good.
I use Redmond’s raw salt and garlic powder and sometimes also raw sliced garlic on the meat. Raw salt does not raise my blood presser, whereas cooked salt does, also raw salt does not make you gain water weight, but it usually makes you lose water weight!
After I have salted and seasoned the sliced meat I place it in a plastic bag (or ceramic/glass container) and place the meat in the refrigerator overnight to 24 hours, because this has the effect of marinate and the Jerky will taste a lot better.
Then I place it in a food dehydrator like the one below at about 105 degrees F for approximately 30 hours or until it is done. After the Jerky is done I place the it in brown paper bags, so it can breathe some. Two pounds of sliced meat will fill two food dehydrators like the one below with five trays each!
Sometimes if I am concerned about the cleanliness of the meat, I wash it with 3 percent H2O3 i.e. Hydrogen Peroxide for about two minutes and then I rinse it off with plenty of water before seasoning it.
So much of the Jerky now days is polluted with MSG, corn syrup and many other chemicals that, I have resorted to making my own Jerky.
Aajonus Vonderplanitz http://drbass.com/aajonus.html of course recommends a raw food diet and I have tried this for short periods at a time and one thing I can say for it is that it strengthened my muscles about 25 percent sitting home and not exercising, because I was not very well at the time. Also I have to take HCl (hydrochloric acid) and digestive enzymes to digest protein, but not when it is raw protein!
I remember reading in the Bible (paraphrased) that when the Israelites were in the wilderness (at one time) that they had to eat raw meat and the woman became as strong as the men and Book of Mormon had a similar situation.
The Bible says (for the Hebrews) that to only eat meat in times of famine or sever cold. My thoughts on that is that that when you read what a famine really means (http://en.wikipedia.org/wiki/Famine) then we are in a worldwide famine right now because even prosperous countries where the populace is even overweight are suffering from severe malnutrition and toxicity. A carrot grown just 25 years ago had approximately 20 times more nutritional value in it, then one grown today. This is true for a lot of other foods also, because the soils are seriously depleted. Vegetarians are sick more than meat eaters and live shorter lives. Meats have concentrations of protein, minerals and many other nutrients. Cooking meat and vegetables and fruits kills invaluable enzymes and other nutrients.
We are in a worldwide famine so let’s eat meat! I had a difficult time of it, eating raw meat, so I went to Jerky, which is really just seasoned raw meat in a different form, but psychologically more palatable for me, maybe as time progresses I will not bother to Jerk it!?
